Sweet and Spicy Chicken
1 pound chicken breasts (cut into small chunks)
2 garlic cloves
3 tbs soy sauce
3 assorted colored peppers
1/2 cup chicken broth
2 tbs dark soy sauce
1 tablespoon rice vinegar
4 tablespoons raw organic honey
2 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon sesame oil
1 tbs chilli paste
1 tablespoon sesame seeds
1 tablespoon corn starch mixed with 1/2 cup water
Cut the chicken into cubes and medicated with the soy sauce and garlic cloves.
In a pan over high heat, add vegetable oil.When the oil is hot add chicken.
Cook for 6-8 minutes, or until chicken is cooked through. Flip the chicken halfway through. Turn the heat off and set aside.
In a separate pan, add all the ingredients for the sauce except for the corn starch and water mixture. Let them cook well then when it boils add the cornstarch mixture.
Add the chicken to the sauce. Toss well until chicken pieces are evenly coated. Let simmer for 2 minutes then add the veggies for 1 minutes.
Transfer to a plate and top with scallions if desired. Serve immediately Enjoy !
