Oreo Brownies

  • 1 1/4 cups granulated sugar

  • 1 cup unsalted butter

  • 2 large eggs plus 1 egg yolk, cold

  • 1 teaspoon vanilla extract

  • 3 tablespoons unsweetened cocoa powder

  • 1/3 cup vegetable oil

  • 1/2 cup all-purpose flour

  • 1/8 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup semisweet chocolate chips

  • 1 cup dark chocolate chopped

  • 6 Oreos


  • Preheat the oven to 325°F.

  • Line a 8 by 8-inch pan with foil and spray with nonstick cooking spray.

  • In a microwave safe bowl, add the butter and chocolates.

  • Microwave until the butter is melted add the dark chocolate and let it sit for 5 minutes until it melts. Whisk in the eggs, egg yolk, and vanilla and stir in the oil.

  • In a separate bowl mix the cocoa powder, flour and sugar, baking soda, and salt.

  • With a rubber spatula, stir in the wet ingredients in the dry ingredients and stir well until combined. Add the semi sweet chocolates and fold them in.

  • Spread the brownie batter evenly into the prepared pan. Then crush the Oreos to pieces and spread them on the top.

  • Place in the oven and bake for 30 minutes, or until the brownies are set and a cake tested inserted into the center has moist crumbs attached. Do not overcook. Let cool completely before cutting and serving.
