1 1/4 cups granulated sugar
1 cup unsalted butter
2 large eggs plus 1 egg yolk, cold
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1/3 cup vegetable oil
1/2 cup all-purpose flour
1/8 teaspoon baking soda
1/4 teaspoon salt
3/4 cup semisweet chocolate chips
1 cup dark chocolate chopped
Preheat the oven to 325°F.
Line a 8 by 8-inch pan with foil and spray with nonstick cooking spray.
In a microwave safe bowl, add the butter and chocolates.
Microwave until the butter is melted add the dark chocolate and let it sit for 5 minutes until it melts. Whisk in the eggs, egg yolk, and vanilla and stir in the oil.
In a separate bowl mix the cocoa powder, flour and sugar, baking soda, and salt.
With a rubber spatula, stir in the wet ingredients in the dry ingredients and stir well until combined. Add the semi sweet chocolates and fold them in.
Spread the brownie batter evenly into the prepared pan. Then crush the Oreos to pieces and spread them on the top.
Place in the oven and bake for 30 minutes, or until the brownies are set and a cake tested inserted into the center has moist crumbs attached. Do not overcook. Let cool completely before cutting and serving.
