Gooey Nutella Pie
1 cup unsalted butter, room temperature
1 cup brown sugar & 1/2 cup white sugar
1 teaspoon vanilla
1 table spoon of cornstarch
1 large egg and 1 egg yolk
1/2 cup cream cheese
3 cups of plain flour
1/2 teaspoon baking soda
1 tsp baking powder
1/2 tsp salt
2 cup chocolate chips & 1/2 cup chocolate chunks
1 cup of Nutella
Grease and line an 8 inch square or round baking tin with baking spray or parchment paper, ensuring two sides overhang. Preheat oven to 180 C (360 F).
In a mixing bowl add flour, baking powder, salt, baking soda and cornstarch.
In a large mixing bowl, cream butter and sugar for 3-4 minutes with an electric beater or until pale and creamy. Add vanilla, egg and egg yolk and beat again until combined then add the cream cheese and mix it really well.
Add the chocolate chips and gently stir.
Divide the dough into two and press half of the cookie dough into the bottom of your pan to form one even layer. Add the Nutella and spread. Add some chunks over the Nutella.
Then grab the other half of your cookie dough and put on top of the Nutella. You will then need to spread it out so the Nutella is fully covered. Press the remaining chunks on top.
Pop into the oven for approximately 20-30 minutes or until golden brown on top. Leave to cool completely in the tin before removing. Cut into slices and serve.
