Fudgy Chocolate Loaf Cake
10 tbsp butter
1 cup dark chocolate, chopped or morsels
1 3/4 cup all purpose flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt
1/2 cup dark cocoa powder, sifted
1//2 cup light brown sugar
1 cup sugar
2 tsp vanilla extract
1 cup heavy cream
1/2 cup chocolate chips to fold in the cake
1/2 cup semisweet dark chocolate chips, for topping
Preheat the oven to 350F. Grease a 9×5.5-inch (1.5qt) loaf pan with baking spray, line with parchment paper and grease lightly again.
In a medium saucepan over medium-low heat melt the butter add the dark chocolate chips or morsels let it sit for 5 minutes then mix till smooth.
In a large bowl, combine the dry ingredients: flour, sifted cocoa powder, baking soda, baking powder, sugar, light brown sugar and salt. Whisk until fully incorporated.
In a separate bowl, whisk the eggs vanilla and cream until smooth then add the butter mixture and mix well.
Mix the wet ingredients with the dry ingredients, and mix until there are no longer any clumps of flour.
Fold in the chocolate chips, if using.
Transfer batter to loaf pan and smooth out the top using an angled spatula. Don’t fill the pan all the way, leave at least 1 inch from the rim of the pan so it doesn’t overflow).
Sprinkle the chocolate chips on top.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out mostly clean.
Allow to cool for 10 minutes and transfer to a cooling rack. Enjoy! Add some Vanilla Ice cream!
