Apple Hand Pies
3 cups thinly sliced & peeled Granny Smith Apples
2 tsp. lemon juice
1 cup brown sugar
1/2 cup sugar
1 Tbs cornstarch
1 tsp vanilla
1 tsp. ground cinnamon
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/2 stick of butter
1 lb. puff pastry thawed
1 egg yolk
Cinnamon sugar mixture ( 1/2 cup sugar, 1/4 cup brown sugar and 1 tsp cinnamon)
For filling: Place peeled and sliced apples in lemon juice and stir to coat. Add cinnamon, salt, nutmeg, vanilla and sugars and mix well. Add the butter in a saucepan and melt then add ur apple mixture. Cook on medium heat about 6 minutes then mix cornstarch with 2 tbs of water. Add it to the pan and stir. When the mixture thickens turn of the heat and set aside to cool.
To assemble: Make egg wash by whisking egg yolk and 2 Tbsp. water with a fork. With a rolling pin, roll out pastry halves to 1/8". Cut each half into 4-5 rectangles. Brush the edges with the egg wash. Then Place 1-2 Tbsp of apple filling on half of one side of each pastry rectangle. Close the rectangles tightly while you apply it with a fork to tighten them.
Brush the top with egg wash and sprinkle with the sugar mixture.
Bake for 20-25 minutes or until golden and the pastry is cooked though. Makes 8-10 hand pies. Can cut recipe in half to make 4-5 hand pies if desired. Enjoy!
